I'm on a quest to try out as many healthy crockpot recipes from this cookbook as I can, so I thought I'd show you what the book looks like! There are a TON of awesome ones I can't wait to try! (thanks for the gift Mom! :) Did you know you can even make cake, and beverages in a crockpot?! Who knew?! It's called "Crock Pot- the original slow cooker - recipe collection"
RECIPE for this soup page 66 (tastes better than it looks...promise!)
1 Tbsp extra virgin olive oil
1 C. chopped green bell pepper
1 cup chopped onion (or more if you're like me:)
1/2 cup sliced celery
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1 can (15.5 oz) navy beans, drained and rinsed
1 medium zucchini, chopped
1 C. frozen cut green beans, thawed
2 cans (14 oz each) low sodium chicken broth
1/4 tsp garlic powder (or I like minced too)
1 pkg (9 oz) refrigerated sausage or cheese-filled tortellini pasta
3 Tbsp chopped fresh basil
grated Asiago or Parmesan cheese (optional)
1. Heat oil in large skillet over medium heat until hot. Add bell pepper, onion, and celery. Cook and stir 4 min or until onions are translucent. Transfer to 5 qt. slow cooker.
2. Add tomatoes with juice, navy beans, zucchini, grean beans, broth and garlic powder. Cover; cook on low 7 hours or on high 3.5 hours.
3 Turn crock pot to high. add tortellini and cook on high 20-25 minutes longer or until pasta is tender. Stir in basil. Garnish each serving with cheese. Enjoy on a cold cozy night :)
