cute, edible acorns!

Got this idea from pinterest!

Noosa yogurt

I've seen this yogurt in the stores so many times and was always curious. So, I'm just here to tell you that it is DEEEELISH! You should try it! I've only had the raspberry, but there are others! Different than greek (which I am addicted to) but so so tasty and fresh!

California Pizza Kitchen macaroni and cheese

My dad, Kyla and I went out for lunch last weekend and Kyla ordered the mac and cheese. Ohmygoodness it was good! So, when the manager stopped by our table to see how our meal was, I asked him if he'd share his secret. He kindly replied "of course! It's super easy, and I make it with my girls at home."
So, not a healthy meal per say, but it sure is good :)

shredded velveeta, half and half, and milk. That's all you need. Melt ingedients together and pour over noodles. YUM!

I have to re-post this recipe cause it's "that time of year" for yummy baked goods. This is my all-time favorite! (and the kitchen smells delicious right now!)

CHOCOLATE CHIP PUMPKIN BREAD:
3 1/4 c flour
1 T. baking soda
1 1/4 tsp salt
1 tsp cinnamon
2 cups choc chips
4 eggs
3 cups sugar
2 cups canned pumpkin
1 c vegetable oil
2/3 c water

Beat eggs, sugar, pumpkin, oil and water. Fold in flour, soda, salt and cinnamon. Add chocolate chips. Pour into 2 greased loaf pans. I use butter and then coat with sugar so it comes out with a yummy, sweet, crunchy outside :) Bake at 350 degrees for 1 hour and 20 min or until toothpick comes out clean. (Make sure to let it cool almost completely before turning it out)
ENJOY!!! :)
WARNING : you may not be able to stop eating this :)

Texas Caviar Salsa (From Lynette's kitchen!)

Clara even loves it!

1 cup vegetable oil
1/2 cup apple cider vinegar

1/4 tsp pepper

Bring this mixture to a boil and cool. Then pour it over the following:

2 green peppers (or one green and one red)
1 red onion (or you can also use white or yellow)
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can white corn, drained

YUMMY!!! ENJOY!

dash ground all spice or cloves

6 carrots, pared and quartered

1 jar pearl onions
3 Tbsp all purpose flour

In a large stew pot, thoroughly brown meat in 2 Tbsp hot shortening, turning often. Add 2 cups hot water and next 9 ingredients. Cover and simmer for 1.5 hours stirring occasionally to keep it from sticking. Add vegetables. cover and cook 30-45 min or until vegetables are tender.

Slowly blend 1/3 cup cold water into 3 Tbsp flour. Stir slowly into hot stew mixture. Cook and stir til bubbly. * If you need to add more liquid, add more of the other ingredients proportionally!

Pringles tin, turned cute!

I am helping with a fundraiser tomorrow and these lil guys are going to be filled with cookies galore for people to bid on! They are super easy to make!  All you need is paper to wrap around a (cleaned out) Pringles tin, glue, ribbon and a tag of your choice! Thanks to Pinterest for another great idea!! :)

What to do with all this basil?! (thing 1)

I have fresh basil coming outta my ears right now, so this is "thing 1" of how I am going to try and use it! ...and I think this is my new favorite meal :o)

2 large tomatoes, cup up
1 onion
minced garlic clove
10-15 leaves of fresh basil, cut up
1/4 cup balsamic vinegar
1-2 Tablespoons of sugar
fresh mozzarella (I bought balls and cut them in half)
stone fired flatbread (found at Festival foods)

Combine the first 6 ingredients, let sit in fridge for a couple hours.
Drizzle olive oil on flatbread, use slotted spoon to scoop the tomato mixture on top of the flatbread, then top with fresh mozzarella and bake til melted and crispy (about 400 degrees or so)
EAT!!!

Stay tuned for "thing 2" ;o)

Salad my kids can't enough of!

When we have left over grilled chicken terriaki, this is what we do with it, and and I love that my kids gobble it up! I cut up the grilled chicken, add strawberries, almonds, organic spring greens mix, and a little balsamic vinegar mixed with a tablespoon of sugar! Yummo, and so easy!
