CHOCOLATE CHIP PUMPKIN BREAD:
3 1/4 c flour
1 T. baking soda
1 1/4 tsp salt
1 tsp cinnamon
2 cups choc chips
4 eggs
3 cups sugar
2 cups canned pumpkin
1 c vegetable oil
2/3 c water
Beat eggs, sugar, pumpkin, oil and water. Fold in flour, soda, salt and cinnamon. Add chocolate chips. Pour into 2 greased loaf pans. I use butter and then coat with sugar so it comes out with a yummy,sweet, crunchy outside :) Bake at 350 degrees for 1 hour and 20 min or until toothpick comes out clean. (Make sure to let it cool almost completely before turning it out)

trip countdown....for mom and dad to come home that is :)
So, we are taking a trip at the end of the month, and one of our kids in particular is a little sad that we are leaving for a week. So, I thought I'd try this (hope it helps them, Grandma and Grandpa!) to help the time go by in a fun way :) I'm filling them with fun little treats, trinkets, encouraging letters and love notes. They are all looking forward to it! I just used 8 of the bazillion socks we seem to collect that lose their match in the washing machine! (does that happen to anyone else?!) and a colorful shoelace...
